Happy Monday, my friends! I typically end my posts with that well wishing, but today, I really needed to get it started with that. Well, and these Chocolate Dipped Coconut Macaroons.

But I’ll get back to these little morsels in a short bit. They were one of the highlights of our crazy weekend.

So why was my weekend crazy, you ask? Well, it was crazy good mixed with just the right amount of straight crazy to keep us grounded in reality. First, we started the weekend with an inaugural camping night in the back yard.

If you’ve never camped in your backyard, you’re missing out. You get the fun of sleeping in a tent, roasting marshmallows for s’mores and listening to the beautiful sounds of birds chirping in the morning without having to give up the comforts of indoor plumbing and a wireless internet connection. Not to mention, you’re just steps away from your Keurig

Don’t get me wrong, I actually love camping without these things as well (perhaps with the exception of the plumbing thing) but for the weekends when we aren’t planning a big camping trip, these little camp nights in the back yard are perfection.

Another fun moment this weekend came in the form of our church festival. It’s always a good time, filled with funnel cakes, lemonade and all the spinning rides you can handle.

Now, the straight crazy part that kept us from thinking things can’t be perfect all the time is when we had a pipe burst in our basement, essentially setting off a sprinkler system all over toys, couches and carpet. Not as much fun as camping, that’s for sure.

So what do you do when your basement gets hosed down by an ornery pipe? The only things you can do: shrug it off, get to fixing the problem and definitely, definitely make a batch of these Chocolate Dipped Coconut Macaroons. They’ll keep you sane in all of the throwing away of  beloved coloring books and pulling up of sopping wet carpet. Trust me, these little coconut wonders are pretty much magical.

Plus, you don’t even need to pull out your trusty stand mixer to whip these up. Just a bowl, coconut, egg whites and some sugar.  Easy, peasy.  If you love coconut and chocolate as much as I do, you’ll probably also love my Chocolate Coconut Scones. They’re…well, amazing. I need to put those on my list to make this week.

While our weekend was peppered with a bit of drama, the only thing I am honestly focusing on is all of the fun we had. Plus, my husband showed off his plumbing skills by fixing the pipe and thus, saving us from the headache (and cash) of waiting until today to call someone to come out and fix it for us. He’s pretty darn handy like that. I’m definitely keeping him.

So, in the face of a basement flood or just a Monday afternoon, you too, should make these little cookies. They can make any day feel a little bit lighter.

And more coconutty.

Chocolate Dipped Coconut Macaroons

Yield: makes 30 cookies

2 points+ per cookie

Ingredients

3 large egg whites
1/3 cup of sugar
1/4 tsp salt
1 14oz package of sweetened flaked coconut
1/3 cup of bittersweet chocolate, melted

Directions

Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
In a large bowl, mix together egg whites, salt, sugar and coconut until well combined and coconut is evenly moistened.
Use a tablespoon scoop to scoop the coconut mixture onto prepared baking sheet. These cookies don't spread much, so you don't have to worry about them being very close.
Bake macaroons for about 20-25 minutes or until coconut is beginning to turn golden.
Remove and let cool completely. Dip bottoms of macaroons in melted chocolate and place back on parchment lined baking sheet. Chill until chocolate is hardened.
Chocolate Dipped Coconut Macaroons can be stored at room temp, but I found that placing them in an air tight container and storing them in the fridge kept the chocolate from getting a bit too melty - especially in the warm weather.

  1. Oh Emily!! What a weekend! Sounds like you had it all handled though. 🙂 You did exactly what I do. When the going gets tough, the tough get baking.. These looks so delicious. Here’s to a relaxing, low key week ahead!
