I am so excited to welcome my good friend Courtney from NeighborFood here to Jelly Toast to share her mouth watering Peach Crisp Smoothie recipe. Courtney is an amazing cook and fabulous writer and I’m thrilled that she was able to stop by today to share this summery peach smoothie complete with an unbelievable skillet granola. I’m not kidding, this smoothie is blowing my mind.  But I’ll let her tell you all about them:

Hey Jelly Toast fans! I’m so excited to be joining you today from Neighborfood. Can we all just agree that Emily is the smoothie master? I mean, anyone who can find a way to sneak radishes into a smoothie deserves the title of master, right?

The truth is, smoothies aren’t exactly my specialty. I make a pretty tasty green smoothie every now and then, but I’ve never gotten to the place where a smoothie can be a meal replacement. Every time I have a smoothie for breakfast, I feel like something is missing. I find myself staring at the bottom of my empty glass, filled with sorrow that breakfast ended so suddenly.

I think what I really miss is the crunch. I’m an unapologetic cereal lover. I eat it almost every morning without fail. Occasionally, I’ll try to slip in a smoothie, but my brain always catches it. It’s all…Dude, what is this liquid stuff? WHERE IS THE CRUNCH?

Still, I know smoothies are a great way to get some fruits and veggies into my body, and I honestly enjoy making and drinking them. So I decided I needed to come up with a solution. I wanted to make a smoothie that would be healthy and filling, but also have the crunch I crave in the morning.

Friends, let me introduce you to the Peach Crisp Smoothie. Juicy, sweet peaches are swirled up with almond milk, cinnamon, and a touch of maple syrup then layered with crunchy skillet granola. Yes, you read that right. Skillet granola is a real thing, and it’s probably the easiest thing you’ll make all week.

Oats, honey, and a smattering of your favorite nuts is all that’s needed to make a toasty, crispy topping reminiscent of that favorite summer treat: the peach crisp. Sure, you can use your own favorite granola on this recipe, but if you don’t have any on hand this skillet granola can be whipped up in under 10 minutes.

Together, the bright cinnamon spiked peaches and honeyed granola make for a creamy, summery treat with just the right amount of crunch. It’s enough to make this cereal lover question her loyalties.

Peach Crisp Smoothie Recipe

Yield: 2 smoothies

Ingredients

For the Smoothies
2 ripe peaches, halved and pitted
1/2 cup unsweetened almond milk (or other milk of your choice)
1 teaspoon vanilla
1 teaspoon cinnamon
1-2 Tablespoons maple syrup, to taste
10 ice cubes
For the Skillet Granola
1/2 Tablespoon butter
1/2 cup rolled oats
3 Tablespoons chopped nuts of your choice (optional)
1 Tablespoon honey
1/4 teaspoon cinnamon
1/4 teaspoon salt

Directions

For the skillet granola: In a skillet over medium heat melt butter (or you can use a mild olive oil). Add oats and nuts and toss them to evenly coat. Add the honey, cinnamon, and salt and stir to combine. Spread the mixture evenly over the pan and allow to cook for 4-5 minutes, stirring occasionally, or until toasted and crisp. Remove from heat.

For the smoothies: In a blender, combine peaches, almond milk, vanilla, cinnamon, and maple syrup. Blend until smooth. Add the ice cubes and puree until smooth.

To serve, pour smoothie into a glass or glasses and top with cooled granola mixture.

  1. Ahhh, I love reading Courtney’s blog–so excited when I saw her on yours, Emily, because I’m totally falling hard for your blog as well 🙂 this is a class-A recipe that fits summertime and all my smoothie texture needs perfectly.

  2. I’m a HUGE fan of Courtney’s and she didn’t disappoint with this amazing smoothie recipe. Skillet granola?! Brilliant! And her photos are gooooooorgeous as always. I’m so pleased to meet you, Emily! I haven’t been participating as much in Sunday Supper this year (that needs to change) so I don’t think I’ve met you through the SS gang yet. This is a beautiful blog and if you’re the smoothie queen, I’ll definitely be visiting more often because my life is in need of more smoothies!
