roasted berry goat cheese popsicles

Roasted Berry Goat Cheese Popsicles are a sweet and tangy combination of slightly spiced roasted berries and savory goat cheese sweetened with a touch of honey. The results are fruity and creamy and just plain delicious!Roasted Berry Goat Cheese Popsicles by Jelly Toast

In our house, we have several shows that we like to watch all together as a family, but it’s hard to find things that the entire family will actually enjoy. We usually catch up on our Phineas and Ferb on Saturday mornings and I’ve been known to sit in for a bit of Littlest Pet Shop. Don’t judge.

Recently, our fave show to watch is American Ninja Warrior. Have you ever watched this? The things that these people can do with their bodies is freaking unbelievable. My kids lose their minds over it and cheer for their favorites (which they totally have and actually legit remember the contestants names). But of course, it’s on too late at night for our kids to stay up and watch it, so basically all day Tuesday I avoid any Twitter updates and such about the contestants as to not have any spoilers.

SPOILERS AHEAD!!!

So anyway, last night we were catching up on the Dallas Finals from Monday and the awe inspiring Kacy Catanzaro (who was the first woman to ever even finish a course) gets up there and completely dominates and finishes the entire course. And not just finishes, but makes it look like a walk in the park.

I have this weakness. Whenever I watch someone achieve something, whether it’s a physical achievement or a performance or just something that took guts to do, I weep like a baby. I’m not kidding. It doesn’t matter if I know this person or not, but the emotion that takes over is just such profound happiness and a weird sense of pride for them that I just start sobbing. It’s not a pretty picture.

So of course, I’m in tears as she spider jumps up the last obstacle and presses the buzzer and the kids are flying around the room screaming their heads off with excitement (I’m totally raising overly dramatic children, btw). After the excitement dies down and they’ve settled in to watch the rest of the show, the Baby looks at me in all seriousness she says, “Mommy, if I ever do American Ninja Warrior I would definitely wear my swimsuit….and my floaties.”

And then I laughed.

What does this story have to do with popsicles? Not one thing. But these popsicles are awesome and use leftover roasted berry sauce. I’m sharing the full recipe over on My Baking Addiction so be sure to head over and check it out.

  4. I never would have thought of adding goats cheese to Popsicles but I adore it with fruit and honey, so it makes perfect sense in a frozen treat! Yum! Great idea Emily, thanks for the inspiration! Xx
