I’ve got a little something special for you today. Well, two things actually. A fabulous smoothie for the weekend and a lovely cookbook giveaway. My friend Julia has written a most fabulous book, Let Them Eat Kale!, all about – you guessed it – kale! I’ve spoken at great lengths about my feelings about kale (hated it, now love it) so I won’t bore you with another long winded story about how kale chips blew my mind and now I just plain can’t get enough of the stuff.

Like I said, I won’t drone on. What I do want to talk about is this wonderful book and it’s fabulous recipes. Especially this Orange Creamsicle Kale Stem Smoothie. You know I am all about smoothies these days, and I was drawn to this recipe because it uses the part of the kale that I usually toss into the compost bin without much thought: the stems. It turns out, kale stems are wonderful in smoothies and are just as full of nutrients as their lovely leafy bits.

Now for the deets on the book: This is not your typical kale book. While it has a few salads (you know I love me a kale salad as seen here and here) I love how Julia really gets into some pretty creative recipes and uses for kale. Especially if you’re someone who doesn’t really groove on kale in it’s au naturale state. “Let Them Eat Kale!” is packed full of breakfast recipes (including smoothies!!), appetizers, side dishes, snacks, salads, soups, stews, chilis, entrees, and spreads.

Besides this smoothie, we’ve tried the Green Apple, Ginger Kale Smoothie (the green smoothie shown in the photos), the Zucchini, Kale and Sage Frittata (you know I love me some frittatas) and the Classic Guacamole with Kale, which was a totally unexpected surprise! We make guacamole almost daily around here so it was a really fun spin on our classic fave.

In addition to to the recipes, Julia breaks down exactly what kale is all about: from nutritional facts to different types of kale and their general uses. Orange Creamsicle Kale Stem Smoothie Recipe

Yield: 2 smoothies

Total Time:5 minutes

From Julia: If you enjoy creamsicle popsicles, you'll love this smoothie! It bears close resemblance to the popsicle, but is full of nutrition, and a perfect way to start the day. While most people throw away kale stems, there are many uses for them! I like to put them in my smoothies in order to add fiber and vitamins and to avoid waste. While kale stems are fairly gritty, blending them well with other ingredients makes the texture nearly undetectable.

Ingredients

1 cup full fat coconut milk
1/2 cup unsweetened almond milk
4 small navel oranges (or 2 large), peel removed
zest of 1 orange
4 kale stems, chopped
2 frozen bananas
1/2 cup ice cubes (more if using fresh bananas)

Directions

Place ingredients into a high powered blender and blend until smooth. Enjoy!

Notes:

Emily's notes: If you want a sweeter smoothie, add 2 pitted dates or a tablespoon o honey.
