
It’s posts like these that I find the most difficult to write. I stare at the screen and struggle to sum up a friendship in just a few paragraphs as well as express my happiness for my dear friend, Jamie from My Baking Addiction, who’s about to embark on the single most exciting time of her life – motherhood.
I’m finding it fairly impossible, actually, so it’s a good thing I brought along some sweet and tangy Meyer Lemon Scones as an inspirational snack. I think better with snacks.

Have I ever told you how Jamie and I met? Well, we met a little over a year ago, back when I was a nervous new blogger (HA – I still am, but I almost fooled you, right?) on the verge of meeting one of my favorite baking bloggers (Jamie). What can I say? Bloggers hold a way higher celebrity status to me than actors and actresses. I’m pretty sure it’s because my love of fabulous food trumps my love of TV. Just by a smidgeon, at least.
But I digress…
I was super excited when Jamie invited me out for coffee after having exchanged a few emails and realizing that we live basically down the street from one another. Talk about a small world. I eagerly – and extremely nervously – went off to meet her and her friend at Starbucks, and that’s when things went from nervous to disastrous in a hurry. As I sat down at the table that Jamie and her friend were sitting, I went to place down my insanely large, grande coffee concoction – and being the insanely klutzy person that I am – proceeded to dump my coffee all over her poor, unsuspecting friend. I wish I were kidding.
I was mortified.
I figured Jamie would mop up the coffee, write me off as a spaz and be done with it, and who could blame her. Much to my surprise, she and her friend laughed it off and then we proceeded to have a great time sipping coffee (or what was left of it) and chatting about blogging stuff.
So yeah, I make GREAT first impressions. As a warning, if you meet me in person and I nervously chat your ear off or dump coffee on you, please just power through. I promise after that I can be lots of fun. A bit wacky, but fun.
Anyway, what does all this have to do with Jamie and her sweet little girl that will be arriving incredibly soon?
Admittedly not much. But when I was thinking and reflecting on the course of Jamie’s and my friendship, which has turned into one that I truly cherish, it gets me thinking how amazing this whole blogging community is. How many true friends that I have made (both virtually and in person) and how lucky I feel to be apart of it.
Without this community, I wouldn’t have met and become friends with Jamie, who I’m so excited to be able to celebrate today.

When I found out that Jamie was having a little girl, I started thinking of all of the incredible blessings that my baby girl brings to our family. Now that she’s 4, she is very active in the kitchen with me, wanting to help with her own meals as well as be the chief cookie maker. We’re always dressing up as princesses and having puppet shows and tea parties. I just love our princess filled days.
I’m beyond excited for Jamie and for all the princess dresses, kitchen adventures and tea parties that are in her future. Congratulations, Jamie! I can’t begin to tell you how happy I am for you and Eric <3

It’s the thought of tea parties that made me want to make some delightfully lemony scones for Jamie’s virtual baby shower. These sweet, citrusy scones served on pretty flowery plates would be welcome at any tea party. I used my favorite Meyer Lemons to add a touch of tanginess and a whole lot of flavor. They are one of my kiddos’ favorite recipes to help make, so it seemed like the perfect treat for today.

This entire celebration wouldn’t have been possible without the hard work of our good friend, Amber. She organized this wonderful virtual baby shower celebration for Jamie, Eric and Baby ‘E’. Thanks so much, Amber!

Yield: 10 scones
Prep Time:15 minutes
Cook Time:20 minutes
Total Time:35 minutes
1. Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper and set aside.
2. In a medium bowl, mix together milk, egg, sugar, vanilla, lemon juice and zest. Set aside.
3. In a large bowl, whisk together flour, baking powder and salt. Using a pastry blender, cut the cold butter into the dry ingredients until it is the size of small peas and evenly incorporated. Work quickly so the butter does not soften too much.
4. Gently mix the wet ingredients into the dry ingredients using a wooden spoon.
5. On a floured surface using floured hands, knead the dough 4-5 times. Dough will be quite sticky, so sprinkle on more flour as needed.
6. Place the dough on the prepared baking sheet and form into a 8-9 inch disc, about 3/4 inch thick. Use a knife and cut the disc into 10 wedges (like a pizza) leaving the pieces in place.
7. Brush the entire round of scones with the egg white and sprinkle with remaining 2 tablespoons of sugar.
8. Bake scones for 18-20 minutes or until slightly golden brown. Remove scones and all them to cool on the pan.
