chocolate matzo bark with pretzels and wowbutter
So, my kitchen is full of chocolate matzo bark, cookies for the food blogger swap and a simmering crock-pot of hot chocolate, and all I can think about is last night’s episode of Homeland.
Blowing. My. Mind.
This is not your ordinary holiday bark. It’s a twist on the classic. And then maybe a twist on the twist. This is chocolate matzo bark with pretzels and wowbutter. Oh, yes.
It starts with Matzo crackers and WOWButter. Due to the Baby’s peanut allergy, I have been experimenting with peanut butter alternatives in desserts. I have had some great results with SunButter and now with WOWButter – which is a butter made from roasted soy nuts. The texture is incredibly similar to actual peanut butter – not grainy the way some alternative butters can be. It also has that unmistakable roasty flavor of peanut butter and doesn’t have to be refrigerated.
That paired with smooth chocolate and salty pretzels seemed like a match made in Matzo bark heaven to me.
Growing up, my dad always had Matzo crackers in the house. My Dad and I would take a whole cracker and spread it with a thin layer of jelly – all the way to the edges of the cracker. It was very difficult to carry around, as I refused to use a plate, but my goodness was it delicious.
I saw the idea of making holiday bark on the base of a Matzo cracker several years back in my Martha magazine. I instantly thought of my Dad and that he would probably love a Matzo bark, so I whipped up a batch. I was right, he did love it. And so did I.
I have been making it every year since, but I’ve never made it the same way twice. This is my first peanut butter (alternative)/chocolate combo, but I can tell you right now that it definitely won’t be my last. Luckily half of the bark found it’s home at my parent’s house so I didn’t completely embarrass myself with it. Just kind of.

Chocolate Matzo Bark with Pretzels and WowButter Recipe
Yield: 5 crackers (20 servings)
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Ingredients
Directions
In a microwave safe bowl, place white candy coating and melt according to package directions. Remove from microwave and add the WOWButter to the bowl and microwave for an additional 15-20 seconds. Stir to combine.
Place semi sweet chocolate chips in a second microwave safe bowl and microwave on high for 30 seconds. Stir and microwave for an additional 15 seconds. Repeat the process until the chocolate is melted and smooth.
Lay matzo crackers out on a large sheet of wax paper. Spoon the WOWButter mixture on top of each cracker and spread evenly to coat.Gently spoon dark chocolate over the WOWButter mixture creating stripes. Use a butter knife to swirl the chocolate with the WOWButter mixture.Sprinkle the crushed pretzels onto the swirled chocolate layer. Refrigerate crackers until chocolate is firm.
Break the bark into pieces. Eat and repeat.
Bark can be stored in the refrigerator for up to one week.
