balsamic glazed brussels sprouts with bacon + onion
I’m getting a little choked up over here. This is the last dish in ‘My Ultimate Thanksgiving’ menu, and I am a bit sad to see it come to an end. Don’t worry, it’s not unusual for me to get a little weepy at the end of a good meal. It’s always a sad thing to see the last slice of pie or bite of cranberry sauce disappear. On second though, that doesn’t sound like something a well adjusted person would get upset over. I guess it’s a good thing that I’ve never claimed to be a well adjusted person.
Allow me to direct your attention away from my uncontrolled food emotions and onto these sweet little sprouts. Yes, I said sweet. And they are. Especially after they are drizzled in an incredibly sweet, aged balsamic vinegar.
A couple of weeks ago, my parents {being awesome as they are} showed up on my doorstep bearing an unexpected yet intriguing gift. A sample set of olive oils and balsamic vinegars from Bumble Olive Oil Company.
They are a local artisan store here in Toledo, Ohio and they carry a huge selection of fresh and infused olive oils and incredible aged balsamic vinegars. I started brainstorming recipe ideas and remembered that Brussels sprouts were the last dish on my list to make for ‘My Ultimate Thanksgiving’ menu. Perfect. Balsamic Glazed Brussels Sprouts with Bacon and Onions. Yes, please!
After taking one bite of these glazed sprouts, I had to stand in my kitchen – for several minutes – and convince myself not to take a drink of the vinegar straight from the bottle. I wish I was kidding.
Besides being roast-y, tangy and sweet these Brussels sprouts couldn’t be easier to make. And frankly, having an easy-to-assemble dish on Thanksgiving – amidst the roasting and mashing and stuffing – is really a great thing.
These sprouts just involve cutting and tossing and roasting.
And a finishing drizzle, of course.

Balsamic Glazed Brussels Sprouts with Bacon and Onion
Yield: 6-8 servings
Ingredients
Directions
Preheat oven to 400°.
On a rimmed baking sheet, toss together Brussels sprouts, onions, garlic and bacon. Drizzle with olive oil and sprinkle with salt and pepper to taste. Toss to coat. Spread veggies into a single layer.
Bake for 20-25 minutes, tossing once halfway through cooking. Veggies should be tender and golden at the edges, and bacon should be cooked through.
Remove from oven, drizzle with balsamic vinegar. Toss to coat and serve!

I went to school in Toledo (and now reside in Cleveland) but find myself in Toledo often or at least driving through…I will need to check Bumble Olive Oil my next time through…thanks for sharing.

I have to tell you.. I don’t use recipes ever because I always make them up in my head. After seeing how delicious the Brussels sprouts looked I made them the next night!
