Not sure what to do with your radish greens? Use them in a radish green smoothie! They are tender and mild and blend perfectly with apples, blueberries and bananas.
While I may have worried you with the title of this week’s Saturday Smoothie post, please don’t be alarmed! Radish greens boast none of the bite-y spiciness that their beautiful little ruby roots contain. They are tender, mild and are packed full of vitamins C and B. These greens are no joke.
My quest for how to use radish greens started when I got a few bunches of the most stunning radishes you’ve ever seen from our CSA. These radishes were a rainbow of red, pink and white and honestly got my heart pumping with the possibilities of these gorgeous little roots. After being mesmerized by these radishes, I noticed the un-blemished and perky green leaves on their tops. These were no ordinary limp and lifeless radish greens. These leaves were beautiful.
It got me thinking that these lovely leaves could have uses for which I had never explored. The truth is, radish greens rock. They are mild and tender and actually work nicely in a salad, but in this case, I wanted to try them out in my morning green smoothie. These radish greens, combined with a large, honey crisp apple, some frozen wild blueberries and a large banana made for one delectable smoothie. It was fruity but very filling.
I realized that there is a whole world out there of greens. Greens beyond my favorite kale and spinach. A world that I want to explore further.
Watch out beet greens, I’m coming for ya.

I’ve put all sorts of veggies in smoothies but have never thought to add radishes! This is brilliant! I’m all about a good detox smoothie – now more than ever since I just spent the last 7 days doing nothing but eating and drinking on the beach, ha! This will be one of my first post-vacation healthy smoothies. LOVE it!
