Happy Fourth of July!
Now, I realize that the expected cocktail for the Fourth of July Cocktail Friday should be something boasting red, white and blue but I’m going against the grain and assuming that you’ve had enough red, white and blue food shoved in your face to last you for a while. Instead, I’m giving you a light, refreshing and summery Ginger Collins.
Ok, maybe it’s just an excuse to make another cocktail with my fave among fave’s: Domaine de Canton. But honestly, this ginger liqueur is delightful. Especially when paired with crisp gin, lemon and a twist of lime.
What’s also so great about this cocktail, other than the crisp and refreshing nature of the drink itself, is that it’s very neutral in color so that it will go with all of your festive red, white and blue food that you’ll be eating tonight. See? No one ever accused me of not looking out for you. Clashing cocktails are no good.

My husband and I are sipping these on a warm Friday in San Diego. Delicious, but soo alcoholic! We added some extra lemon juice and muddled strawberry to cut down on the strength of the gin.
