Today is the first day of August, and I can’t recall a past summer that has moved so quickly. While I’m loving the cooler weather we’ve been experiencing the last several weeks, I can’t help but fixate on the fact that the Buddy starts Kindergarten in just 2 weeks. It just seems too soon! But he sure does look dashing in his little uniforms.He’s super jazzed about his PlanetBox lunch box. I can’t blame him, it’s pretty awesome. Lunches just aren’t going to be the same without him home. I’m hoping that it inspires me to pack him wonderful lunches all year, and hopefully a special lunch will help us both feel better.
I had the immense pleasure of attending a Food Photography Workshop this weekend in Birmingham. The experience was beyond inspiring, and I am still rolling over my thoughts from my time there. I’ll share more soon – you can count on it.
I am becoming quite addicted to flying. The actual time in the air is so peaceful. Staring down at all of the beautiful clouds and (when closer to the ground) small miniature looking towns, streets and cars really puts things in perspective.
I have a package of tofu in my fridge that I impulse bought last week. Let me say I didn’t have any idea what I was going to do with it, but I’m pretty sure this is going to be the answer to my tofu questions.
My sister-in-law swears by roasted broccoli, so I’m going to try it. I’ve never met a roasted veggie that I don’t love, so I’m confidant it will be fabulous. What’s your favorite roasted vegetable?

Your SIL is on target with the roasted broccoli!! I eat it almost every night!! Just spritz it with a little olive oil spray, season it up and roast it. Crunchy goodness!!
I love roasted brussels sprouts. So many people don’t like them, but when they’re roasted in good olive oil with some garlic and chilli, it’s my version of vegetable heaven! I’ve never tried roasted broccoli, but now I feel that I need to! Lovely post. Can’t wait to see your take on tofu dishes! x
