yogurt parfaits with quaker cookies
I’m not sure if you’ve noticed, but it’s already the beginning of May. I know you’ve heard it a hundred times (and most likely said it yourself as much, too) but where has this year gone? Seriously.Time is flying, and with it, the end of the Buddy’s preschool days. Forever. As in, next year my little guy will be in Kindergarten and preschool will be a distant memory. Except for the fact the Baby will be in her first year of preschool. I wonder how they’re coming on the whole ‘freezing time’ thing. If it were a thing, that is.
I guess that’s something that we can always count on. Time keeps moving. And as much as I joke, I wouldn’t want it any other way. With each day, there comes a new adventure, a new thing to look forward to.
And in the case of today, a new delicious snack: Quaker Mixed Berry Oatmeal Cookies. And yes, they are as good as they sound.
I cannot begin to tell you how much the Baby loves parfaits. She is my little parfait queen. She loves to make them, eat them, talk about them – you name it. And because she’s three, it is the perfect little snack for her to help make.
It’s a perfect snack to make after school while we’re catching up on all of the exciting events from the school day. Plus, my kiddos love the fact that they can make the parfaits all on their own.
All I have to do is wash some berries, get out the yogurt and supervise the assembly.
After choosing their parfait cup of choice (the Baby usually changes her mind a half a dozen times before we settle on one) they layer in Greek yogurt, fresh berries, a drizzle of honey, and some crumbled up Quaker Cookies.
Layer and repeat. Easy peasy.
Gotta love a good healthier cookie!

I hear you, Leslie. I used to laugh when I heard people (grown ups) say that, but now that I am one, it’s sooo true.
Look lovely, delicious and easy! My kind of snack! I cried the day my last finished preschool.. Now he’s almost 14. I can’t believe it. I’m sure you’ve heard it before but enjoy these years they go by waaaaaay too fast!

Beautiful! My daughter is just about to turn 2, and I can’t decide which year, her first or her second, has gone by faster! It’s crazy how fast time flies.

I’m with you, Loretta! Every time I hear myself say “where did the time go?” it makes me feel old, but I don’t care! It’s going way to fast!
