Easy Ice Cream Pies + a video

During the last few weeks, we have been smacked with a huge heat wave, with humidity levels at an all-time high. This is simply a reality in the summertime, but it means that when those temperatures start to spike we need to adjust our activities. Some evenings have been too warm to sit by a fire and roast marshmallows and the days have been too warm for firing up the oven to bake. Summer is no-bake season around here and I have just the dessert to help beat the heat during this sweltering part of summer: Easy Ice Cream Pies!
The kids and I went and picked up several flavors (because I can never buy just one container of ice cream) as well as some other layering ingredients such as Benton’s Speculoos cookies, Clancy’s Pretzel Sticks, and some fresh strawberries. We were letting the ingredients inspire our combinations and we couldn’t wait to get back home and start “no-baking” our pies.
The first of our easy ice cream pies was a simple strawberry pie, using Real Strawberry Belmont Premium Ice Cream layered with fresh strawberry slices.
Next up was a Salted Caramel Pretzel Ice Cream Pie using the Belmont Sea Salt Caramel Light Ice Cream. This ice cream is so creamy, I wanted to jump right into the container and eat my way out. But I resisted and we layered with pretzel sticks and Berryhill Caramel Topping, instead. I’m glad I waited because this combination is incredible!
Last, but certainly not least, is the Cookie Lovers Ice Cream Pie. This pie is made with Belmont ® Premium Chocolate Chip Cookie Dough Ice Cream, Benton’s Speculoos cookies, and Berryhill ® Hot Fudge Sauce. Woah, were these flavors made for each other.
After layering each pie, we just covered them with plastic wrap and popped them in the freezer to let them set up a bit. We have been slowly eating our way through these pies and they’ve been fun to have in the freezer for a little “fancy” dessert without any of the fuss.

Easy Ice Cream Pies
Yield: 8-10 servings per pie
Total Time: 10 minutes + freezing time
Ingredients
Strawberry Ice Cream Pie
- 1 Bakers Corner Graham Cracker Crumb Crust
- 1 quart Belmont Premium Ice Cream, Real Strawberry, divided
- 1 cup sliced strawberries
Salted Caramel Pretzel Ice Cream Pie
- 1 Bakers Corner Graham Cracker Crumb Crust
- 1 quart Belmont Light Ice Cream, Sea Salt Caramel, divided
- 1 cup Clancy’s Pretzel Sticks, crushed
- 1/2 cup Berryhill Caramel Topping, warmed and divided
Cookie Lover's Ice Cream Pie
- 1 Bakers Corner Graham Cracker Crumb Crust
- 1 quart Belmont Premium Ice Cream, Chocolate Chip Cookie Dough, divided
- 6 Bentons Speculoos Cookies, crushed, divided
- 1/2 cup Berryhill Hot Fudge Topping, divided
Directions
Strawberry Ice Cream Pie
Allow ice cream sit at room temp for about 5 minutes to soften, but not melt. Spread half of the ice cream in the bottom of the graham cracker crumb crust. Top with half of the sliced strawberries. Repeat with remaining ingredients. Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!
Salted Caramel Pretzel Ice Cream Pie
Allow ice cream sit at room temp for about 5 minutes to soften, but not melt. Spread half of the ice cream in the bottom of the graham cracker crumb crust. Top ice cream with half of the crushed pretzels and caramel topping. Repeat layering with remaining ice cream, pretzels and caramel topping. Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!
Cookie Lover's Ice Cream Pie
Allow ice cream sit at room temp for about 5 minutes to soften, but not melt. Spread half of the ice cream in the bottom of the graham cracker crumb crust. Sprinkle ice cream with half of the cookie crumbs and drizzle with half of the hot fudge sauce. Repeat layering with remaining ice cream, cookies and hot fudge sauce. Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!
