It may seem that I have cast iron skillets on the brain, and that is probably pretty accurate. I just shared my CSA Frittata recipe and now this luscious Peach Thyme Skillet Cake. In my defense, these recipes used two different cast iron skillets. So, you know, totally different.

In fact, I’m sharing this gorgeous and simple Peach Thyme Skillet Cake recipe over on My Baking Addiction and along with it, admitting my newbie status to the world of cast iron skillets. Yes, I’m a late comer to the cast iron cooking game.

But then again, I’m always late. Seriously, just ask my husband. If you can’t find him, he’s the one waiting patiently in the car while I run around the house searching for my other shoe. Or my keys. It always seems to be my keys.

Anyhoo…

This cake is amazing and quite the crowd pleaser. It’s sweet, but not too sweet. Special and impressive without being difficult to make. All of my favorite things. Plus, if you’re following along with my Weight Watcher’s adventure, it’s 6 points+ per serving. Not too bad for a piece of summer time cake, that’s for sure.

  2. Oh my goodness! I am absolutely in love with this cake! I saw it over on MBA but didn’t read the post (shame on me!) so I didn’t even realize the recipe was yours. I loved this cake so much that I’ve already baked an adaptation yesterday. That will be up on my site at the end of July. I love herbs and fruit together and this cake truly embodies those flavors. Now that I know this is your recipe I really hope you’ll like my adaptation of it. I truly enjoyed this cake. It was amazing! Now I’m headed back to MBA to read the post like I should have in the first place.

    • I’m so glad you liked the recipe! I am totally guilty of skimming posts, too, so no worries. It always seems if I see a picture of something that draws me in, I usually want to go right to the recipe and check it out. I can’t wait to see your version!!

  3. What a lovely cake!! I’ve never tired a skillet cake and have been wanting an excuse to get a cast iron skillet for years… this just may be what takes me over the edge 🙂
