If you’re like us, you’ve been stuck inside your house for the last several days and getting a little (read: serious) case of cabin fever. We’ve got several feet of snow outside as well as some seriously frigid temps and I have absolutely no desire to go outside and deal with it. On the flip side, I’m just about at the end of my tolerance for lounging around every day in my pajamas and generally being wholly unproductive. That is a sentence I never thought I would utter.
It’s not just me, though. My kiddos are going insanely stir crazy, sprinting around the house and leaving messes everywhere they go, and I’m quickly running out of things to entertain them with while we’re awaiting the return of our daily routine. There’s another thing I never thought I’d be: a routine person. But there you have it, I have become a creature of habit. I thrive on being forced out of bed every morning by the goal of getting the kiddos up, dressed and off to school. Without that motivation, I tend to dawdle. I waste time by lingering too long over my cup of coffee, slipping into the time suck of Pinterest and generally watching way too much Phineas and Ferb. Today is the day we break the streak of snow day monotony. The fact that the weather looks like it’s going to warm up to a balmy 3 degrees tomorrow, this may be our last day off for a while, which makes it the perfect day to whip up some goat cheese.
No, I don’t mean make goat cheese from scratch. I mean literally ‘whip’ it up as in make whipped goat cheese. If you’ve never tried it, you must!
I always have giant amounts of goat cheese in my fridge, due to my obsession with Costco, so this is a perfect snack to make on an afternoon when going to the store is just not an option. To be honest, going to the store for the past 4 days hasn’t been an option. Luckily, I have my trusty twin logs of goat cheese and several fresh herbs chilling in my crisper drawer. Just add some crackers to the mix and we’ll have ourselves a little party. Maybe we’ll pair it with some yummy hot chocolate and really go nuts.

This looks delicious Em! So weird to be reading about you being snowed in whilst I’m sitting in the middle of a heatwave. It’s forecasted at 43 degrees C tomorrow (109.4 degrees f) and my husband and I are planning to spend the entire day in the pool! Hope that you manage to stay warm.. glad that the temps are getting a bit more reasonable! Love the look of this goat cheese. Yum! xx
