We’re smack dab in the middle of Spring break. And for us, Spring break isn’t picking sand out of my bathing suit and slurping down little umbrella’d-out drinks (man, I miss those days). Now, Spring break is a week off of Preschool and trying desperately to keep everyone entertained for the week.  Luckily for us, our entertainment arrived in the form of my super fun sister-in-law and nieces who drove in for the week to visit. They’re the best!

This is our third annual Spring break visit with them, and every year, every single year, we have an awesome week filled with long visits and great food (we went to a Hibachi grill last night and have cupcakes on the agenda for today). The kiddos are out of their mind, crazy-like-a-straw excited about getting to hang out with their ‘big kid’ cousins. Not to mention the fact that the adults get to stay up late with an excuse to shoot the breeze and catch up on goofy stuff that we haven’t gotten to chat about since Christmas.

For example. Last night, we ‘adults’ stayed up till the wee hours of the night (read: 10:30) talking about movies. Movies that we love, movies that we hate, movies that we hate the fact that we love. You know, the usual.

It got me thinking about all the ridiculous movies that I love, including the ones that I simply can’t turn off if I happen to pass by them while flipping around on the TV. I think everyone has a list like that. It might include well accepted classics, and some pretty guilty pleasures. Because I’m in a sharing mood, here are a few of the movies that for some reason, never fail to suck me in (in no particular order):A Few Good Men

The Big Lebowski

The Breakfast Club

Clue

13 Going on 30

Robin Hood (Yes, the Kevin Costner version)

And I should really stop there before I completely lose you. I’m not proud, but for the record, I’m too old to be embarrassed. I like what I like and it’s just the way it is.

So, what do these Wow Butter Chocolate Chunk Cookies have to do with visiting family and weirdo movies? Well, they are both on my mind at the moment… aannnnd….that’s all I’ve got.

Well, that’s not entirely true. These cookies are a classic and nostalgic (just like most of my movies) peanut butter and chocolate chip type of cookie, but I replaced the peanut butter with my current bff peanut butter alternative, Wow Butter. Now, you could probably use Biscoff spread with great success and really, a cookie made from cookies would be an awesome thing. I think I know what I’ll be making later.

I also want to mention and send a big thank you to HuffPost Taste for naming me one of their top 10 Food Bloggers for April! Frankly, I was shocked and thrilled. Then I proceeded to do the happy dance in my kitchen for a large part of the afternoon.  The dancing was a bit of a time suck, but totally worth it. Thanks again, HuffPost Taste!

Wow Butter Chocolate Chunk Cookies
Yields: 3 dozen cookies

Ingredients:

3/4 cup of all purpose flour
3/4 cup of white whole wheat flour
1 teaspoon of baking soda
1 cup of Wow Butter
4 Tablespoons (1/2 stick) unsalted butter, room temp
1/2 cup packed brown sugar
1/2 cup granulated white sugar
2 eggs
1 teaspoon pure vanilla extract
1 cup of dark chocolate chunks

Directions

Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. If baking two sheets at once, position oven racks in the upper and lower thirds.

In a medium bowl, whisk together both types of flour and baking soda; set aside. In the bowl of an electric mixer, beat together wow butter, butter and sugar until light and fluffy. Add eggs, one at a time, and beat until smooth. Add vanilla and beat an additional 15 seconds. With the mixer running on low, add the dry ingredients in a little at a time. Mix until just incorporated. Fold in chocolate chips by hand.

Using a tablespoon scoop, drop dough onto prepared baking sheets. Bake for 13-15 minutes, rotating sheets half way through. Allow cookies to cool on baking sheet for 5 minutes and then transfer to wire rack to cool completely.

Eat and repeat.

  1. These look great! Question: what is wow butter? And also, can I use regular butter instead?

    • Hi Rebecca! Wow Butter is a soy nut butter and is an alternative to peanut butter. My 3 year old has a peanut allergy, and I have found the taste and texture to be a good swap out for peanut butter in certain recipes. If you don’t have a peanut allergy, feel free to use your favorite brand of peanut butter in place of the wow butter 🙂 thanks so much for stopping by and taking the time to comment!!

My girls will love these and my husband too and that’s a rarity when everyone in our household of picky eaters enjoys the same thing. Yum! Oh and great movies 😉 every last one of them

  4. Just so you know in the recipe you do not say when to add in the dry ingredients. Being a seasoned baker I know how to do this but lots of people might not!!! They’re a pretty good cookie though 🙂
